
Smoked Salmon Pancakes
INGREDIENTS
- 7oz (200g) smoked salmon from Bakkafrost
- 3/4 cups (100g) flour
- 2 eggs
- 3.4oz (100ml) milk
- Fresh dill
- Salt
- Crème fraîche
- Olive oil for frying
INSTRUCTIONS
Step 1
Prepare the Pancake Mix: Combine the eggs and flour with a pinch of salt. Gradually add milk until you achieve your desired consistency.
Step 2
Cook the Pancakes: Heat a frying pan over medium-high heat with some olive oil. Ladle the pancake mix into the pan and cook until golden brown. Keep the pancakes warm in the oven while you cook the rest.
Step 3
Serve: Top the pancakes with smoked salmon, a dollop of crème fraîche, and the rest of the dill (or chives if you prefer). Finish with a squeeze of lemon.
